Chocolate Peanut Butter Banana Bread

  • ¾ cup (1½ sticks) unsalted butter, softened
  • ¾ cup sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 teaspoon chocolate extract (optional)
  • 3 large bananas, roasted and smashed
  • ¾ cup peanut butter
  • 2 tablespoons oil
  • 1½ cups all purpose flour
  • ¼ cup, plus 2 tablespoons cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ⅓ cup chocolate chips
  1. Preheat the oven to 325 degrees F. Grease and flour a 9 x 5 inch loaf pan.
  2. Beat the butter and sugar together until light. Add in the eggs and beat well before mixing in the extracts. Beat in the bananas, peanut butter, and oil then mix until thoroughly incorporated.
  3. In a separate bowl, mix together the flour, cocoa powder, baking soda, and salt together. Slowly mix in the flour and mix until just incorporated. Fold in the chocolate chips.
  4. Pour the batter into the loaf pan and bake for approximately 65 - 70 minutes, or until a toothpick comes out clean after being inserted in the middle of the loaf. You may need to cover the loaf with aluminum foil after about 60 minutes to prevent over browning.
