A ridiculously decadent salted matcha white hot chocolate to warm you up this winter!
First, before we get into anything, I want to say that I hope your holidays were wonderful and everything is good with you. We had a lovely day with family and it all went by way too fast. We had brunch at our place and I made buttery cheddar biscuits, banana bread waffles and my hazelnut crepes (no one wanted the crepes because they said it was too fancy for them, so I happily overstuffed them with my berry wine jam and Nutella! My mom took care of the bacon and eggs and my daughter was in charge of taste testing obviously.
This drink came from my kitchen fail I mentioned earlier this week about my ruined white chocolate for my soft cut-out cookies. I saved the chocolate because there was no way I was going to let 7 oz of white chocolate go to waste (I kept adding more chocolate to the mix hoping it would save it.... that's not how it works, obviously). I had no clue what to do with it when I read up on ways to save seized chocolate that said you can dilute it with hot water or milk if you didn't need it for a ganache or anything like that.
Naturally, I thought I should make it into a white hot chocolate, so I melted it with milk.... but then it was too sweet, so I subdued the sweetness with some Fleur de Sel. Yum. Salted white hot chocolate is the best.... then I decided to add peppermint because... holidays. Perfecto! While I was enjoying my masterpiece, I noticed the container of matcha on top of the microwave and I thought "Why not? Sometimes you've got to take those risks." And it was definitely the best risk EVER because this salted matcha white hot chocolate is amazing!!
I feel the peppermint is take it or leave it, depending on what your preferences are. It's a nice addition, but might be a flavor overload for some and certainly isn't essential to the recipe. I left it in the recipe simply because that's how I made it... and it also justifies the candy cane I put in all the pictures. 😉

Salted Matcha White Hot Chocolate
Ingredients
- 7 oz white chocolate
- 1 ½ cups milk any kind will work
- 1 ½ teaspoons fleur de sel )mine was infused with vanilla)
- 1 ½ teaspoons matcha powder
- 1 ½ teaspoons peppermint extract optional
Instructions
- Place the white chocolate and milk in a saucepan and heat on medium-low and stir constantly until the chocolate is completely melted into the milk.
- Stir in the remaining ingredients and mix well. Serve hot.
