In one large bowl, mix together the oats, flax meal, salt, and cinnamon together. Toss well. In another bowl, mix together the almond butter, oil, syrup, banana, and vanilla together. Mix well until creamy. Pour the wet ingredients over the oat mixture and mix until well combined.
Place the mixture in an even layer on a parchment lined baking sheet (I used a 9 x 13 inch baking pan). Bake for 15 minutes. Lightly toss the mixture and bake for another 15 minutes and turn off the oven. Lightly break up the granola, leaving as many large chunks as possible. Allow it to cool and harden in the oven with the door cracked for at least two hours. Fold in the dried fruit and chocolate chips if using.
