Place all the ingredients together in a food processor and blend for about 1 minute, or until everything is pulverized and sticks together like a dough.
Use a tablespoon to measure out the mixture and roll into balls.
Notes
For best results, plump the dates by soaking them in hot water for a minute before draining and adding to the food processor. Keep in an airtight container up to 5 days. I prefer them kept in the fridge, but they can be left at room temperature.
