In a large bowl, mix together the oats, coconut, cocoa powder, and salt together.
In a smaller bowl, mix together the sugar, oil, maple syrup, vanilla extract, and coconut extract,
Pour the liquid ingredients into the dry ingredients and mix well until the oats are completely coated.
Pour the oats onto a rimmed baking sheet in a single layer and bake for two 10-minute increments. Stir between each interval.
Bake for another 5 minutes and add about ⅓ of the chocolate (not ⅓ cup) to the granola give it one last quick stir to incorporate the chocolate.
Turn off the oven and leave the granola in the oven with the door cracked for about 45 minutes. Take out and allow to cool completely without stirring so you get large cluster. Once cool, add the remaining chocolate chunks.
