Soak the dates in hot water for about one minute. Drain and cool.
Combine all the ingredients into a food processor or blender and mix well until it forms a ball. Scrape the sides of your container as needed.
Line the bottom of an 8x8 inch baking pan with parchment paper and place the mixture into the pan.
Press down firmly until smooth. I find moistening the bottom of a cup and using that works the best for a smooth top.
Allow it to set for about one hour in the fridge. Cut into bars and wrap each individually in parchment paper or wax paper to prevent them from sticking. Store in an airtight container.
