Preheat the griddle or skillet at medium-low heat.
Mix the flour, baking powder, pumpkin spice mix, sugar, and salt together. Make a well inside the flour mixture. Set aside
Mix the milk, pumpkin puree, melted butter, and vanilla together in a separate bowl.
Pour the wet ingredients inside the well in the flour and mix until just combined. There should be no streaks of flour, but there should still be plenty of lumps.
If your skillet or griddle needs to be greased, do so lightly.
Pour the batter in ¼ cup rounds on your griddle or skillet.
Cook until the batter begins to set at the edges and the bubbles are popping.
Flip them with a spatula, then cook for an additional 2 3 minutes, or until golden brown.
