Brownies just got a major upgrade with these brownie fries. Slices of brownie get covered in chocolate and sprinkled with salt for an amazing sweet & salty combination. Make this brownie recipe even better by dipping them in berry sauce "ketchup" and yogurt "mayo"
We recently got a Red Robin in our area and I was so excited to try them out. I didn't really know what to expect, I thought they were kind of like Applebee's or Chili's. During one of my visits I was checking out their dessert menu and was so completely drawn in by this dessert they call Fruffles (fries + truffles). They are basically fudgy brownies covered in chocolate and topped with salt. I was so taken with the dessert and wanted to try it, but by the time I was finished my burger and bottomless(!!!) fries, I was too full. So, I decided to make my own.
This is possibly the best idea I've had in years. Seriously people, this stuff is what happiness is made of! I made a berry ketchup like they did and for the "mayo" I simply used some vanilla honey Greek yogurt. The "condiments" are great because they add a nice bit of freshness and rounds out the dessert. Don't forget them. It's so easy to use. I just pureed some berries with a tablespoon of jam and that was it.
Now get some brownie fries in your life!
Recipe Card
Brownie Fries
Ingredients
- 1 cup all-purpose flour
- ¼ cup Dutch-processed cocoa powder
- ½ teaspoon salt
- 8 oz semi-sweet chocolate
- ½ cup 1 stick unsalted butter
- ¾ cup sugar
- 3 large eggs
- 10 oz chocolate melted (semi-sweet or dark)
- [Fleur de Sel] or [Maldon salt]
Instructions
- Preheat an oven to 350 degrees F. Line a 9 x 13 inch baking pan with parchment paper.
- Mix together the flour, cocoa powder, and salt together in a small bowl. Set aside.
- In a medium saucepan, melt the chocolate and butter over a double boiler. Mix the sugar and eggs together, then add to the melted chocolate.
- Stir in the flour mixture into the chocolate mixture and mix until there are no lumps. Pour the batter into the baking pan and spread evenly.
- Bake for about 15 - 20 minutes, or until no longer jiggly. Remove from oven and allow to cool completely.
- Cut into thin fry-like shape (I cut the pan in half lengthwise, then several times the opposite way.) Optionally freeze the fries on a baking sheet to make it easier to dip in the chocolate.
- Melt the 10 ounces of chocolate over a double boiler. Coat each of the brownie fries with the melted chocolate and then sprinkle with the salt. Leave to harden on a wax sheet.

Amanda, these look so ridiculously good! I'm seriously drooling over here. This is a fantastic idea, and I love the condiments you created for them. I'm seriously going to have to try this recipe out asap. If I hadn't made brownies yesterday, I would be in the kitchen right now whipping these up! Can't wait <3

They are so yummy and the condiments are really great to balance out all that fudge chocolate. I just know you will love them!!

These are going straight to my "to-bake list"!
One thing I wondered if you could clarify: (I think I got it right, but it's nice to be sure) the ½ teaspoon of something, is it salt?
Amanda says
Yes, it's a type of salt, but you can replace it with Maldon salt or even a coarse sea salt!
Mari says
I was thinking of this part of the ingredients list:
"¼ cup Dutch-processed cocoa powder
½ teaspoon
8 oz semi-sweet chocolate"
But the Fleur de Sel or Maldon salt probably dropped to the bottom of the list during the copy/paste frenzy that is editing 🙂
Thank you for the reply!
Amanda says
Oh! That is salt too! Thanks for pointing that out. My computer does wonky things when I copy and paste and it got missed. So salt twice. The first 1/2 teaspoon goes in the brownie batter and you can use table salt (I used fine sea salt), and then the flour de sel or maldon gets put on top of the chocolate coating!
Lorena says
Seriously?! Amanda, you will crack my healthy real food diet one of these days if you continue like that. *DROOLING*
Liz @ Floating Kitchen says
This is brilliant and I think fruffles is my new favorite word!
Amanda says
Fruffles is a great word. If I get another pet, I think this will have to be its name!

Oooooh! You are so lucky to have a Red Robin in your neck of the woods. I miss their protein burgers. . .but you are right one of their burgers and there surely will no room for dessert.
But these brownie fries are such a brilliant idea. And with the dipping sauces. . .does it get any cuter than that?
Amanda says
I am pretty sure it's red robins mission to make sure we are stuffed silly! I swear one day you'll see me rolling down the street like Violet Beauregard! (Or however you spell her last name)
