Guys, I've kinda sorta been in panic mode for the past week. Okay, I've totally been in total freak out oh-my-god-did-I-just-walk-into-Target-with-my-pajama-pants-on mode. Not that I actually went to Target with pajama pants on. That would be ridiculous. They were pajama shorts. And I was wearing a dress. That makes it okay.
The reason for my panic and inability to properly adult is that my daughter just started kindergarten. Yes, the daughter that spent basically every moment of her five years of life with me. Who I taught instead of putting into preschool because we couldn't stand being apart. That one. The child I am legally required to abandon to a bunch of strangers who are supposed to do things like "teach her." Whatever. I know what's really going on. Everyone is jealous of our beautiful bond and want to tear us apart.
Alright I am done being way over dramatic. But seriously, my hear felt like it was breaking the first day. To that my daughter said "I guess I kind of missed you a little bit." Gee thanks, kid.
What this new adventure does mean, however, is that things are changing in my life and I am finding new routines for us. Routines that don't involve me thinking too much in the morning or running around trying to make sure we've done everything we need to. We plan outfits for both of us. I make lunch the night before. And I also make breakfast the night before.
I have always been a huge fan of overnight oats since I discovered them back in 2012 and would make us this genius breakfast when I was working in insurance. It's my favorite breakfast go-to because its so quick to put together and you can grab and go if you need. This maple French toast overnight oats has been on repeat since she started school. I found this amazing Vermont maple syrup that pairs perfectly with my favorite vanilla and it is a flavor explosion. The apples in the bottom taste like a quick apple pie and it's just the best.
What makes my maple French toast overnight oats really great, however, are the oats, duh. It's no secret that I love Bob's Red Mill (seriously, I am about to start a local fan club), and their oats are my absolute. What I love is that they are kiln roasted so they have a distinctive wholesome flavor that makes you feel good from the inside out. It's a bonus that their gluten-free oats are made in a 100% gluten-free facility and constantly checked to ensure their gluten-free status. Now that Nadia is in school, she has new friends, a couple of which are gluten-free. It's nice knowing that I have something I can feel confident giving them if they decide to come over.
Oh boy, am I going to start carpooling now? Maybe it's time for me to look into a minivan! Kidding! (maybe?)

Maple French Toast Overnight Oats with Apples
Ingredients
For the apples
- ½ Granny Smith apple peeled and diced
- 1 - 2 tablespoons unsalted butter or coconut oil
- ¼ teaspoon ground cinnamon
- 2 tablespoons maple syrup
- 1 tablespoon water
- ½ teaspoon vanilla extract
- pinch of salt
For the Oats
- ⅓ cup Bob's Red Mill Old Fashioned Oats
- 2 tablespoons chia seeds
- pinch of salt
- ¼ teaspoon ground cinnamon
- ½ teaspoon vanilla extract
- 2 tablespoons maple syrup not pancake syrup
- ⅓ cup plus ¼ cup almond milk (more if you prefer a thinner consistency)
Instructions
- Finely dice the apple. Add the butter (or coconut oil) to a skillet and heat on medium. Add the apples and cook for about 2 minutes. Add the cinnamon, maple syrup, water, vanilla, and salt. Cook until a everything starts to thicken. Set aside to cool to room temperature. (I speed this up by placing in the freezer)
- In a small bowl mix together the oats, chia seeds, salt, and cinnamon together. Add in the vanilla, maple syrup, and almond milk. (I prefer thick overnight oats, but you can add ⅔ cup or even ¾ cup of milk if you prefer yours thinner).
- In your containers for breakfast, add a layer of the apples, then top with the oats. Cover tightly then place in the refrigerator for at least 4 hours, preferably overnight.
- Serve hot or cold!

Overnight oats are my fave at the moment! Love the sound of the maple apple layer too - looking forward to breakfast is the best. So exciting that your girl is now at kindy - must be such a massive change for you though. Hope it's all going well!

I am in love with overnight oats! Nadia loves kindergarten, but does get a little sad in the morning thinking about how much she will miss me. I usually don't feel it until she gets on the bus. It is nice being able to have a consistent solid block of time to work though!
