Summer is in full swing and all the cold desserts and treats are very much needed. I’ve been dreaming of this blueberry ice cream pie for a very long time, and finally found the perfect time to make it for the family. I don’t make a lot of ice cream pie, honestly.

Ice cream cake, yes. We love ice cream cake. It’s one of our favorites. Ice cream pie on the other hand, is something we don’t have often, but I am not entirely sure why, because it is so delicious and SO easy to make. Want to know what makes this recipe so yummy? NEW Blueberry Cheerios!

We start with vanilla ice cream. Homemade is the best, but no one will notice if you use store-bought. Then we add swirls of blueberry jam that is thinned out slightly. You can use water or lemon juice to do that. Personally, I prefer the brightness of the lemon juice. Then you pour it into your crust before topping with fresh whipped cream.

Blueberries are one of my favorite summer fruits. I love baking with them, and use them in a lot of the desserts here on the site. I especially love the color the blueberries give when swirled into the ice cream. For me, this blueberry ice cream pie is a true mash up of blueberry pie flavored ice cream in pie form. The blueberry crust adds something a little special.

While the usual types of crust are amazing, but there is a whole other world out there to help elevate the flavor of your dessert. Blueberry Ice Cream Pie

Blueberry Ice Cream Pie

A velvety blueberry ice cream pie that makes the perfect cool-down treat

Prep Time 25 minutes
Total Time 25 minutes

Ingredients

  • 1 ½ cups finely crushed Blueberry Cheerios
  • 6 tablespoons unsalted butter, melted
  • 4 cups vanilla ice cream, softened
  • ¼ cup blueberry jam, thinned
  • Whipped cream, for decoration

Instructions

  1. Mix together the crushed cereal and the butter together until it resembles wet sand. Press into a 9-inch pie dish. Freeze until needed.
  2. In a bowl, lightly stir together the blueberry syrup and the ice cream so there are streaks of syrup through the ice cream, do not fully incorporated. 
  3. Pour into the pie dish and spread. 
  4. Freeze until solid. Top with whipped cream.
