Rich, ultra chocolaty brownie muffins that will become your favorite part about waking up in the morning.
It's no secret that I go through serious chocolate cravings every so often. Strong chocolate cravings. The kind that is completely unavoidable and usually ends with me hoarding chocolate in the closet with a gallon of chocolate milk with me. For times like that, I basically live and breathe all things chocolate which is how these brownie muffins with chocolate whipped cream came about.
Usually, I believe that muffins should be on the healthy side, but I made an exception here big time. No regrets, either. Not a single one. You can practically call these cupcakes, but I promise they aren't. I mean, you can still make some adjustments if you are determined to make these a bit healthier. You can replace some or all of the flour with white whole wheat flour (if you want to use regular whole wheat flour, you will need to adjust the ratios in the recipe as it absorbs more liquid).
And you can totally skip the chocolate whipped cream. I don't know why you'd do that, but go ahead. I'll still be your friend. Maybe. (kidding!)
Honestly, I think once you put anything on top of a muffin, it's trying to be a cupcake. Then I saw someone on Instagram make an array of muffins with all sorts of healthy and sweeter toppings and they completely captivated me. I felt totally justified in my decision to put the chocolate whipped cream on these brownie muffins and still call it a muffin.
Let's be real here. When we are going for something chocolate, are we really concerned with healthy or semantics? Because I am pretty sure the only thought going around in my mind is "Gimme all the chocolate!!!"
