Creamiest Roasted Red Pepper Hummus with Pita Chips

The creamiest roasted red pepper hummus with spiced pita chips

Hey, hey! You didn't think I'd give you a bread recipe without giving you something to use with it, did you? We're gonna cut up that pita and brush it with herb infused extra virgin olive oil then bake it into the crisptiest pita bread chips to dip in the creamiest roasted red pepper hummus ever.

Roasted red pepper humus with homemade pita chips - yum!
I didn't forget about my goal to eat a more balanced diet (although I know the past few recipes may telll another story). I've actually been eating a lot of baked fish lately with tons of veggies and opt for fruits and low calorie dips like this hummus to keep me fueled throughout the day. The exercise part though? Wellllll.... I mean... I've managed to do it about once a week-ish, but I do think about it often, so that is a start, right?? I just need more motivation to get myself started. Once I do start working out, I usually don't want to stop.

Creamy roasted red pepper hummus and pita chips
What do you like to do to motivate yourself to start working out? What is your favorite way to work out? Usually I do a quick pilates/yoga stretch, a 20 - 30 minute kickboxing DVD or two, then back to the same yoga/pilates stretch to cool down. Maybe I just need to change things up a bit. I downloaded Zombies, Run on my iPhone a while back so I could go out running in the warmer weather, but that won't be for ages.

Spiced pita chips and super cream roasted red pepper hummus
Until I start getting my keister in gear at least I know I have some delicious healthy snacks I know I can munch on guilt-free.

Thank you for letting me know! When we switched programs to share the recipe cards, we had some issues with posts that had two separate cards not showing up correctly, but haven’t been able to go through everything yet. I will put this on my list to get fixed asap!

You know what, now that I think about it, I used to have a pretty good workout soundtrack. I need to find my old CDs! Thanks for the reminder!

Oh removing the skins from the chickpeas makes sense! (My husband has started making humus and I've always wondered why it was less-than-creamy). Roasted red peppers are delicious and a great combination in humus. Pinning! Thanks for sharing, stopping by from SITS.

Yes, you never would think that such a small thing can make a big difference, but it really does! Its super tedious, but i find putting something on Netflix helps pass the time nicely 🙂

Ooo I have a can of chickpeas just waiting to be made into hummus. Can I use yellow or orange bell peppers instead of red?

Thinking about exercise counts...its part of the prep. The hummus looks delish and I am going crazy over the seasoning you used on the pita chips. A craving is starting to build. . .

Yoga is my go to mixed with heavy weight training. I absolutely hate running. Just hate it. Once in a while I'll get it in my head that I can be like my crazy marathon running friends but no, I'm just not there yet. On a side note, I love all things hummus and pita and my favorite combo is roasted red pepper hummus so sign me up for this!

Uh, I've got another week or so until I'm allowed to work out, and I'm not sure I'm looking forward to it. Then I have no reason NOT to! Lol. Love this dip, and especially those crispy pita chips!
