    Layered Strawberry Overnight Oats

    Breakfast got a whole lot easier with layered strawberry overnight oats. This easy breakfast is as delicious to eat as it is to make.

    Every summer I have a few things that I always do without fail. One is to basically live in dresses. Another is to make a batch of ice cream at least once a week. And of course I need to have a go-to cool summer breakfast. For years, I would alternate between a couple of different smoothies and making overnight oats.

    Back in the day my overnight oats were very simply made. Just a mix of oats and ingredients shaken in a mason jar and that was it. Now I’ve learned that I can keep my oats easy to make while still adding a bit of pizzazz to the mix. My favorite way to do this is to create overnight oat parfaits which are not only very pretty, but adds more texture and flavor to the mix. A favorite one is obviously these layered strawberry overnight oat parfaits.

    To keep things as simple as possible in these layered strawberry overnight oats, I got ingredients that I know my daughter and I love. We particularly love the Smuckers Fruit and Honey Spreads as our fruity layer in our parfaits. I love that it is sweetened with honey for natural sweetness. It better complements the light and fresh flavors in the overnight oats. I also like to add yogurt in the overnight oats as well as in the top layer. I’ve tried many different types of yogurt, but so far, my daughter and I love the smooth, creamy flavor of the Dannon Oikos Plain Yogurt.

    There isn’t any real trick to making these layered strawberry overnight oats which is why I love making them for us in the summer. First, you mix your oats with some creamy Oikos yogurt, then add in chia seeds and thin it out with a splash of your favorite milk. Next, you top this with strawberry Fruit and Honey Spread for sweetness.

    If strawberries aren’t your thing, you can also try their Triple Berry or Blueberry Lemon spreads. (You can find all their products at Target and get a discount using cartwheel.)I’ve tried them all and they are all divine. To finish, top with more yogurt for added creaminess. Dannon offers many different types of yogurt such as their Light and Fit and Activia if you can’t find Oikos.  I love going for the plain yogurts so I can flavor them myself. Sometimes with vanilla extract, lemon zest, or even more honey.

    Cover tightly and chill the refrigerator overnight. In the morning top with berries and/or granola and you are set! When you wake up you don’t need to think about what to make or anything beyond getting dressed and your morning coffee because breakfast is already waiting for you.

    Layered Strawberry Overnight Oats

    Ingredients
      

    • ⅓ cup old fashioned oats
    • ⅔ cup Dannon Oikos Plain Yogurt divided
    • 1 tablespoon chia seeds
    • ¼ cup almond milk
    • ¼ teaspoon vanilla extract.
    • ¼ cup Smuckers Strawberry and Honey Fruit Spread
    • Fresh berries or granola for garnish optional

    Instructions
     

    • Mix together the oats, ⅓ cup of the yogurt, chia seeds, almond milk, and vanilla. Place in a jar.
    • Top with the Strawberry and Honey Fruit Spread, then the remaining yogurt.
    • Cover tightly and leave in the refrigerator for at least two hours, preferably overnight.
    • Top with berries and/or granola and enjoy immediately.
