    I was always so skeptical about smoothie bowls. For me, a smoothie is supposed to be a quick on the go meal or snack and a smoothie bowl takes away from that completely. Then I made my key lime smoothie bowl and realized how delicious they actually are. They are perfect for those days when you want to have something nutrient packed with lots of flavor and texture. It's more on par with a bowl of oatmeal where you have time to put something more hearty together, but maybe you aren't in the mood for a hot meal. I approve. And that's why I am sharing this mango turmeric smoothie bowl with you now.

    So this mango turmeric smoothie bowl comes from a new favorite cookbook, Good Clean Food by Lily Kunin. It's full of simple, but flavorful recipes that don't take a ton of time to make. It's the perfect cookbook for meal prepping and getting back on track (or staying there) without too much effort. In a word, its incredible. She makes eating well look like so much fun and the recipes are pretty freaking tasty.

    I would say that it was hard to choose a recipe from the book to share, but really, it wasn't that hard. Her smoothie bowls look absolutely stunning and drew me in right away. They were the first recipes I tried and the ones I make over and over again. The only issue was choosing one smoothie bowl in particular to share. In the end, this mango turmeric smoothie bowl won out because of its sunshine yellow color and the fact that it is easier to find turmeric than it is to find pink dragon fruit.

    I just adore the bright, almost mustardy color of the turmeric smoothie. It is like pure sunshine in a bowl. The mango and citrus reinforce that brightness in flavor and color. The turmeric adds a lovely warmth to the flavor profile while also dialing up the vibrancy of the smoothie bowl.

    Mango Turmeric Smoothie Bowl

    Ingredients
      

    • ½ cup coconut milk*
    • 1 cup frozen diced mango
    • ¼ avocado
    • ½ peeled orange
    • ½ lime juiced
    • 1 teaspoon ground turmeric I recommend [Rodelle's Organic turmeric]
    • ½ cup ice cubes
    • goji berries coconut flakes, bee pollen, and strawberries (for topping)

    Instructions
     

    • Add the coconut milk, mango, avocado, orange, lime juice, turmeric, and ice to a blender.
    • Blend the ingredients until it is a thick, creamy smoothie.
    • Pour into a bowl and top with the goji, coconut, bee pollen, and strawberries
    • Enjoy immediately.

    *I used fresh coconut milk because I am a crazy lady

      I hated smoothie bowls for a while! I thought they were kind of stupid. But then I started thinking of it like an ice cream bar where you get to pick your toppings so that every bite you get a little something different and I liked it. I love mango and turmeric together and lol, you're not crazy! Fresh coconut milk is so much better!
