    Strawberry Champagne Mojito

    Beautiful, bubbly strawberry champagne mojito - this cocktail is perfect for a special night in, or when you just want to treat yourself!

    So, it's no surprise that I love making pretty drinks.... I've also come to realize that I love making mojitos in particular. I can't get enough of my ombre blueberry mojito shooters or the blackberry prosecco mojitos that directly inspired this strawberry champagne mojito. I'm nothing if not consistent! 

    What I really wanted here was to create another pretty ombre effect with the drink that would be perfect for Valentine's Day. 

    I just love how we get from that intense dark pink to something lighter and fades into clear, sparkling champagne. And the pairing of strawberry, mint, and lime bring a freshness that reminds you that spring is fast approaching. Love is in the air.... if not with a significant other (like me), than certainly with a refreshing, beautiful drink like this strawberry champagne mojito.

    Besides, in my book, V-Day is all about celebrating love in general. Love for yourself, your family, friends, and those small moments in life that bring a smile to your face. 

    What Is a Strawberry Champagne Mojito

    So, this cocktail was inspired by two things. The first being my blackberry prosecco mojito, the second being that one song from Bruno Mars. 

    We start off with a homemade strawberry syrup. You can add in some of the pulp if you want, but I prefer to leave it out. You can also use strawberry jelly (the stuff without the strawberry bits) that's been thinned out, but the flavor won't be as nice. It's just a good option if you are in a tight pinch.

    We then muddle the mint with lime and the strawberry syrup to get the flavors infused. Strain and add in the rum. 

    Once that is all together in a glass, top off with the champagne. You can leave it with the ombre effect, or you can stir to combine everything together. 

    How to Turn This Strawberry Champagne Mojito Into Punch

    You can easily scale up the recipe so you can serve it as a punch for several people. Instead of muddling the mint and the lime in a cocktail shaker like normal, you can muddle everything in a saucepan and use a fine mesh strainer to strain out the mint and lime. Strain the mixture right into your punch bowl and add the rum. When it's all mixed together, top with champagne.

    Ingredients
      

    Strawberry Syrup

    • 1 cup sliced strawberries
    • ⅓ cup granulated sugar
    • 2 tablespoons water

    Strawberry Champagne Mojitos

    • 3 oz strawberry syrup
    • 1 lime sliced
    • 10 mint leaves
    • 4 oz light rum
    • ice cubes
    • champagne

    Garnish

    • strawberries
    • mint

    Instructions
     

    • In a small saucepan add the strawberries, sugar, and water. Heat the mixture on medium high and mash well.
    • Heat until the strawberries are broken down and the liquid looks as though it has thickened a little. Strain through a fine mesh strainer and chill. I recommend putting in the freezer for faster chilling.
    • In a cocktail shaker, add the strawberry syrup, lime slices, and mint leaves. Muddle well, then add the rum, plus a few ice cubes. Shake well to combine.
    • Strain the mixture into your ice-filled glasses, then top with champagne.
    • Garnish with a fresh strawberry and mint, if desired.
